Ingredients

  • 1 double packet pizza dough mix
  • 400g good quality tomato sauce
  • 500g beef mince
  • 100g Parmesan cheese, freshly grated
  • 50g breadcrumbs
  • 3 tbsp olive oil, plus 1 tbsp for the chilli and beetroot salad
  • 1 garlic clove, crushed
  • 2 tbsp Spanish onion
  • ¼ tsp pimentón, spanish smoked paprika
  • 2 eggs
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 4 sprigs fresh thyme, leaves picked
  • 350g beetroot, peeled and grated
  • 1 small fresh red chilli, deseeded and finely chopped
  • ½ lemon, juiced

Method

Step 1

Make the dough, according to the packet instructions. Knead on a floured work surface for about 5 minutes until smooth. Place in an oiled bowl, and cover with a clean tea towel. Leave in a warm place until doubled in size.

Step 2

Meanwhile, put all the ingredients for the burgers in a bowl, and season with salt and black pepper. Mix together well by hand. With damp hands, form the mixture into balls about the size of small walnuts – 36–40 balls. Sit on a large baking sheet lined with baking parchment, and press down with your thumb to flatten a little. Chill to firm, while the dough is rising.

Step 3

Preheat the oven to 200°C (400°F/Gas 6). Once the dough has doubled in size, remove from the bowl, and knead lightly on a floured work surface. Roll out to about 5–6mm ( 1 / 4 in) thick. Using a biscuit cutter, cut into 4–5cm (1 3 / 4 –2in) discs, and place on a large baking sheet lined with baking parchment.

Step 4

Transfer the trays of pizza bases and burgers to the oven. Bake for 10–15 minutes until the bases are golden and the burgers are cooked through. Warm through the tomato sauce. Put all the ingredients for the salad in a bowl, and stir through. To serve, spoon a little of the tomato sauce onto the pizza bases, then top with the burgers. Garnish with the beetroot salad, and serve immediately.
