Prepare Ahead

The pastries can be made up to 4 hours in advance.


Instructions

    Preheat the oven to 190°C (375°F/Gas 5). Lightly grease a baking tray. Mix the hazelnuts, 11/2 tbsp sugar, amaretto, and chocolate until combined.

    Cut out 24 squares, each 10cm (4in), from the filo. Place some filling in the middle of each square. Brush a little water around the edge, gather the sides around the filling, and pinch into a purse-like shape.

    Place the pastries on the baking tray and bake for 10–12 minutes, or until golden. Brush gently with honey, leave for 5 minutes, then dust with icing sugar. Serve warm or cold.

  • 115g hazelnuts, ground
  • 2 tbsp icing sugar
  • 3 tbsp amaretto
  • 75g dark chocolate
  • 4 filo pastry sheets
  • 3 tbsp clear honey
