Fizz adds the requisite touch of glamour to this festive fusion of port and spiced rum, from drinks experts The Cocktail Lovers.

Ingredients

  • 50g caster sugar, mixed with 50ml of water
  • 1 cinnamon stick, for the syrup
  • ½ grated nutmeg, for the syrup
  • 35ml Captain Morgan's Spiced Rum
  • 40ml sparkling wine
  • 20ml freshly squeezed clementine juice
  • 1 piece orange peel, to garnish
  • 15ml port
  • 2 cloves
  • 1 vanilla pod, split

Method

Step 1

First make the spiced syrup, warming the caster sugar with 50ml of water, the cinnamon stick, nutmeg, two cloves and a split vanilla pod together gently for 3-4 minutes, stirring occasionally. Leave to cool for 10 minutes.

Step 2

Strain the liquid twice to remove bits and decant into a jar.

Step 3

Shake the rum, 30ml of the spiced syrup, clementine juice and port in an ice-filled shaker for 15 seconds.

Step 4

Pour into a chilled flute and gently add the sparkling wine. Stir with a long spoon. Squeeze orange peel to release oils over the drink. Garnish with a strip of orange peel or edible gold leaf.
