- Poached Salmon with Watercress Mayo
Ingredients
- 1 lemon , sliced
- 4 pieces salmon fillet
- 3 tbsp dry white wine
- 50g watercress
- 100g mayonnaise
Method
Step 1
Preheat the oven to 200°C/Gas6. Take a sheet of baking parchment large enough to generously wrap the salmon fillets, and place in a roasting tin.
Step 2
Slice the lemon and place in the centre of the baking parchment. Top the lemon with the salmon fillets in a single layer.
Step 3
Sprinkle over 2 tbsp of the wine and season with salt and freshly ground black pepper, then wrap loosely twisting the ends to seal. Bake in the preheated oven for about 20 minutes, until cooked through.
Step 4
While the salmon is cooking chop the watercress and stir into the mayonnaise along with the remaining wine.
Step 5
Serve the salmon hot or at room temperature with the watercress mayonnaise, new potatoes, and salad leaves.
