Their rich flavour and meaty texture make portabellini mushrooms ideal for vegetarian burgers. Top burger restaurant Haché’s recipe was the inspiration for this delicious barbecue treat for veggies and carnivores alike.

Ingredients
- 1 portabellini mushroom
- 3 slices grilled red pepper , drained of any oil
- 2 slices grilled courgette
- 1 slice fresh tomato
- 1 small handful rocket
- 1 disc mozzarella , around 2cm thick
- 1 drizzle fresh basil pesto
- 1 ciabatta roll
Method
Step 1
Brush the mushroom with a little olive oil and grill for 2-3 minutes on each side.
Step 2
Slice the ciabatta roll in half and place the mushroom on one side, layering with the red pepper and courgette and topping with fresh tomato, rocket and mozzarella. Finish with a drizzle of fresh basil pesto and enjoy.
