Prawn, Grapefruit, and Avocado Salad

A tangy salad to satisfy lovers of seafood, this is simple enough for brunch but special enough to serve to dinner guests.

Prepare Ahead

The dressing can be made several days in advance and kept refrigerated.


Instructions

    Make the dressing by placing all the ingredients together in a jar and shaking vigorously.

    Pat the prawns dry using kitchen paper, then toss them in a little of the dressing.

    Place the remaining salad ingredients in a large bowl and toss well. Divide between 6 individual plates. Arrange 5 prawns on top of each plate and drizzle with some of the remaining dressing to serve.


Ingredients

  • 30 King Prawns, cooked and peeled
  • 2 Pink Grapefruit, divided into segments
  • 1 handful Mint, torn
  • 3 Red Radishes, finely sliced
  • 3 Spring Onions, finely sliced
  • 2 Avocados, peeled and cut into chunks or slices
  • 1 bunch Watercress,
  • 1 bunch Salad Leaves
  • 3 tbsp Thai Fish Sauce, (dressing)
  • 3 tbsp Lime Juice, (dressing)
  • 2 tbsp Caster Sugar, (dressing)
  • 2 tbsp Olive Oil, (dressing)
