Quesadillas with Salsa Mexicana

Traditionally, quesadillas are made with uncooked tortillas, stuffed with cheese, then folded, and deep–fried.

Instructions

    Heat a heavy frying pan over a medium heat. Make the salsa by combining all the ingredients in a bowl, then set aside.

    Place 1 tortilla flat in the pan and heat for 30 seconds. Flip the tortilla over and sprinkle 25g (scant 1oz) of the cheese over the surface. Fold the tortilla in half over the cheese and press down lightly with a spatula.

    Flip the quesadilla over, and cook until it is toasted on both sides and the cheese has melted. Repeat with the remaining tortillas.

    Cut each quesadilla in half, to form triangles, and serve immediately with the Salsa Mexicana and guacamole on the side.

  • 8 Flour Tortillas
  • 200g Mature Cheddar Cheese, grated
  • 100g Guacamole, to serve
  • 2 Tomatoes, finely chopped
  • ½ Onion, finely chopped
  • 1 Green Chilli, deseeded and finely chopped
  • 1 handful Coriander Leaves, chopped
  • 1 tsp Salt
  • ½ Lime, juice
