Ingredients

  • 12 slices bread, a mixture of white, wholemeal, and granary
  • 2 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • 1 handful mixed salad leaves
  • 4 servings cooked peeled prawns
  • 3 slices ham
  • 1 small aubergine, chargrilled
  • 1 egg, hardboiled
  • 4 slices mozzarella
  • 4 lemon, juiced
  • 4 servings tomato

Method

Step 1

Mix the mayonnaise and mustard together in a bowl. Cut the egg, aubergine, mozzarella, lemon, and tomato into slices on a board and spread with the mayonnaise.

Step 2

Top 3 slices of bread with ham, sliced egg, and a few salad leaves. Divide the prawns between 3 slices with a lettuce leaf and a slice of lemon to squeeze over. Finally layer the aubergine, mozzarella, and tomato slices and place each stack on the remaining bread slices.

Step 3

Top with leaves, season to taste with salt and pepper, then transfer to a serving platter and let everyone help themselves.
