Full of nutritious nuts and seeds these wheat free apricot and oat bars make an excellent naturally sweet treat.

Ingredients

  • 200g dried apricots
  • 100ml apple juice
  • 75g butter
  • 50g soft brown sugar
  • 225g Scottish rolled porridge oats
  • 50g mixed seeds
  • 50g mixed nuts, chopped

Recipe tips / Prepare ahead

Preheat oven to 160c/Gas Mark 2/3.

Method

Step 1

Place the apricots and apple juice in a small pan, bring to the boil, then remove from the heat and set aside until cooled.

Step 2

Line a 18cm x 27 cm tin with baking parchment.

Step 3

Blend the apricots and apple juice together until smooth.

Step 4

Melt the butter and sugar together then add to the apricot mixture and mix.

Step 5

Stir in the remaining ingredients and press firmly into the lined baking tray.

Step 6

Cook in the preheated oven for 45 minutes. Cut into bars and then leave in the tin until completely cold before turning out. Store in an airtight container.
