  • 275ml champagne or medium-dry sparkling white wine, very well chilled, plus 1tbsp
  • 1 large lemon, plus 1tbsp juice
  • 95g caster sugar
  • 10g leaf gelatine (6 sheets measuring about 11.5cm x 7cm)
  • ½ tablespoon brandy
  • 75ml double cream
