Simple Chicken Caesar salad

Instructions

    Season the chicken breasts and turn in olive oil. Heat a griddle pan and griddle the chicken for approximately 5 minutes per side until cooked through.

    Pour 6 tablespoons of Caesar dressing into a bowl. Add 2 tablespoons of grated Parmesan cheese and half the lemon juice and stir. Add more lemon juice and grated cheese to taste

    Roughly chop the anchovies and cut the lettuce into largish chunks.

    Mix the lettuce, anchovies and croutons with the dressing and serve an equal portion of dressed salad onto 4 plates.

    Slice the chicken diagonally into four or five slices, place a sliced chicken breast on top of each salad. Serve topped with Parmesan shavings.

  • 4 Chicken Breast Fillets
  • 1 Lemon, juice of 1 lemon
  • 1 handful Black Pepper Ciabatta Croutons
  • 2 Romaine Lettuce
  • 2 tbsp Blended Olive Oil
  • 5 fillets Marinated Anchovy Fillets
  • 100g Parmigiano Reggiano Stick
  • 6 tbsp Caesar Dressing
