Smoked Mackerel & Sweet Potato Cakes

This delicious dish might look exclusive, but works out at just over two pounds per person.

    Preheat the oven to 190°C/Gas 5. Peel the sweet potatoes and then grate into a bowl. Remove the skin from the smoked mackerel and discard, flake the fish into the sweet potatoes.

    Add the zest of the whole lemon and 1 tablespoon of the juice along with the chopped coriander, mix thoroughly. Sprinkle over the flour and stir until all incorporated.

    With damp hands shape the mixture into 8 cakes and place on a non sticking baking tray. Bake in the preheated for 20-25 minutes until golden. Serve with green beans and potatoes of your choice

  • 250g smoked mackerel
  • 1 lemon
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp plain flour
  • 1 drizzle olive oil, for drizzling
  • 100g green beans, to serve
  • 250g potato, to serve
