Squash Fairy Cakes

Great cakes for enjoying either at home or as part of a packed lunch.

Prepare Ahead

Preheat oven to 180Âșc and prepare a cake tray ready with cases.


Instructions

    In a large bowl, mix the oil, eggs, sugar and vanilla until smooth. Sift in all the dry ingredients.

    Beat well together and stir in the squash and nuts. Place a large spoonful of the mixture into each fairy case. Pop into the oven for 20 mins or until firm to touch. Take out of the oven and leave to cool.

    For the icing, mix all ingredients in a bowl until smooth. Spread over top of cooled cakes and decorate with chopped dried fruit and mixed nuts.

  • 1 Butternut Squash, finely grated
  • ½ cup Golden Caster Sugar
  • ½ cup Walnut Pieces
  • 1 Unwaxed Lemons, zest
  • 2 medium Eggs
  • ½ cup Extra Virgin Olive Oil
  • 1 cup Stoneground Spelt Flour
  • 1 tsp Mixed Spice
  • ½ tsp Cinnamon Powder
  • 1 tsp Vanilla Extract
  • 1 tsp Bicarbonate Of Soda
  • 200g Cream Cheese
  • 100g Unsalted Butter, melted and cooled
  • ¾ cup Icing Sugar, sifted
