   Preheat oven to 180ºc and prepare a cake tray ready with cases. In a large bowl, mix the oil, eggs, sugar and vanilla until smooth. Sift in all the dry ingredients.

   Beat well together and stir in the squash and nuts. Place a large spoonful of the mixture into each fairy case. Pop into the oven for 20 mins or until firm to touch. Take out of the oven and leave to cool.

   For the icing. Mix all ingredients in a bowl until smooth. Spread over top of cooled cakes and decorate with chopped dried fruit and mixed nuts.

• ¾ cup Icing Sugar, sifted
