Squid in Olive Oil and Paprika
Calamares con pimentón picante is made here with hot paprika (picante) but you could use a sweeter version.
Buy squid already cleaned. Good with other tapas, such as chorizo and olives.

Slice the squid “tube” into rings.

Heat the oil in a frying pan on a medium heat, add the garlic and fry for 1 minute, stirring, then increase the heat and add the squid. Fry for 3 minutes on a high heat, stirring frequently.

Season to taste with salt, then add the paprika and 1 tablespoon of lemon juice.

Transfer to small serving plates and serve immediately, with lemon wedges for squeezing.
