Ingredients
- 200 g of tenderstem broccoli, cut into 2 inch strips
- 1 tin of borlotti beans, (around 400g) drained
- 0.5 red onion, sliced
- 4 ripe tomatoes, roughly chopped
- 1 bunch of parsley, shredded
- 4 tbsp of extra virgin olive oil
- 1 tbsp of red wine vinegar
- 1 sprinkle of salt, to season
- 1 sprinkle of black pepper, to season
Method
Step 1
Bring a medium pan of salted water to the boil, add the Tenderstem and cook for 1 minute. Drain, cool under cold running water and set aside.Step 2
Mix together in a large bowl all remaining ingredients including the Tenderstem, season with salt and pepper and serve.
