Tomato, Red Onion, and Mozzarella Salad

It’s well worth investing in a good-quality balsamic vinegar, one that is deliciously sweet and thick, and a good-quality fruity extra virgin olive oil.

Instructions

    Put the tomatoes, red onion, and half of the basil leaves in a bowl. Drizzle over plenty of olive oil, season well with salt and black pepper, and toss through.

    Arrange the rocket leaves on a serving platter, and drizzle over a little olive oil and some balsamic vinegar. Season with salt and black pepper, and spoon over the tomato and basil mixture. Add the torn mozzarella. Scatter over the remaining basil leaves, and drizzle again with a little olive oil and balsamic vinegar. Serve immediately.

  • 8 ripe plum tomatoes, sliced
  • 6 cherry tomatoes, halved
  • 1 small red onion, peeled and sliced
  • 1 handful fresh basil leaves, torn
  • 1 drizzle extra virgin olive oil
  • 2 handfuls wild rocket leaves
  • 1 drizzle balsamic vinegar
  • 2 balls mozzarella, torn
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
