Red Onion Pakoras

Try making these delicious red onion pakoras with ready sliced red onion for a quick and easy accompaniment to curry - the nation's favourite dish.


Instructions

    In a large bowl mix together the onions, carrots, gram flour, baking powder, chilli powder, cumin, salt and coriander.

    Add the egg and about 8 tbsp of water, you need the mixture to be a thick batter, mix well.

    Heat about 2cm of oil in a frying pan over a moderately high heat. Place heaped spoonfuls of the mixture in the hot oil, don’t overcrowd the pan - you will need to cook these in batches. Cook for 6-8 minutes turning once, until golden and cooked through.

    Drain on kitchen paper and keep warm while you cook the remaining batter. Serve with curry.

  • 300g carrots, peeled and coarsely grated
  • 125g gram flour
  • ½ tsp baking powder
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • 4 tbsp fresh coriander, finely chopped
  • 1 egg, beaten
  • 2 cm oil, for shallow frying
