In a large bowl mix together the onions, carrots, gram flour, baking powder, chilli powder, cumin, salt and coriander.

Add the egg and about 8 tbsp of water, you need the mixture to be a thick batter, mix well.

Heat about 2cm of oil in a frying pan over a moderately high heat. Place heaped spoonfuls of the mixture in the hot oil, don’t overcrowd the pan - you will need to cook these in batches. Cook for 6-8 minutes turning once, until golden and cooked through.

Drain on kitchen paper and keep warm while you cook the remaining batter. Serve with curry.

- 200g red onion, ready sliced
- 300g carrots, peeled and coarsely grated
- 125g gram flour
- ½ tsp baking powder
- 1 tsp chilli powder
- 1 tsp ground cumin
- ½ tsp salt
- 4 tbsp fresh coriander, finely chopped
- 1 egg, beaten
- 2 cm oil, for shallow frying
