Place the fish fillets in an oven-proof dish.

Combine the lemon juice and zest, olive oil, herbs, salt and pepper and pour over the fish.

Leave to marinate for 2 hours.

Preheat the oven to 180C.

Arrange the tomatoes and onions over the fish.

Bake the fish, covered for 20-30 minutes, until the fish flakes easily.

Pour on the Villa Modena Mediterranean Herbs Balsamic Glaze to taste.

- 1 lemon , juiced and zested
- 2 tbsp extra virgin olive oil
- ¼ cup fresh basil and/or parsley
- 1 pinch salt
- 1 pinch black pepper
- 1 can chopped tomatoes
- 2 tbsp minced onion
- 1 drizzle Villa Modena Mediterranean Balsamic Glaze
