Gastro Chunky Basa Fillets in Rocket Basil & Parmesan Sauce

with a Warm Sweet Roasted Pepper & Tomato Orzo Salad

Serves: 2

  • 1 red pepper, deseeded and cut into wedges
  • 1 red onion, cut into wedges
  • 12 cherry tomatoes, halved
  • ½ tsp caster sugar
  • 2 tbsp olive oil
  • 8 black olives, pitted
  • Salt and freshly-ground black pepper
  • 100g orzo
  • Gastro Chunky Basa Fillets with a Rocket, Basil & Parmesan Sauce
  • Basil leaves for garnishing
  • 1. Preheat the oven to 200°C / Fan 180°C / Gas Mark 6.
  • 2. Place the red peppers and onions on a baking tray. Season with salt and pepper, sprinkle over the sugar and drizzle with half of the olive oil. Bake in the oven for 15 minutes, then add the tomatoes and bake for a further 10 minutes.
  • 3. Cook the orzo according to instructions on the pack, drain and place the orzo in a bowl along with the remaining olive oil and the pitted olives. Add the roasted peppers and tomatoes, and season with salt and pepper. Toss gently together.
  • 4. Cook the Gastro Chunky Basa Fillets with Rocket Basil & Parmesan Sauce according to the instructions on the pack, serve with the Orzo Salad & garnish with basil leaves
