No Christmas stocking is complete without a small, sweet citrus at the bottom. But should it be a clementine, a tangerine or a satsuma? Anyway, what’s the difference? Broadly, they’re all versions of mandarin oranges, also known as easy-peelers.

Our favoured mandarins are the Clemenules, Berkane and Nadorcott. Clemenules are smooth, sweet and juicy, and are really tasty in November. Moroccan Berkane have a PGI. Picked between Jan and April, Nadorcott have a perfect balance of sweetness and acidity
Clementine and pistachio mini pavlovas are a super simple
Mandarins are put in Christmas stockings to mimic St Nicholas who gave three poor women each a bag of gold. Tangerines get their name as they were originally shipped from Tangiers, Morocco.
