Cooking guidelines
Cooking time 11 minutes.
Bring a large pan of water to the boil and add salt if required. Keeping the water at a rolling boil add the amount of pasta needed. Stir with a wooden spoon to prevent the pasta sticking together and to avoid damaging the pasta. Cook for the recommended time, drain and serve.
Mediterranean Spaghetti - Pasta with Sundried Tomatoes and Black Olives sauce
Serves: 4
Prep time: 15 mins
Cook time: 25 mins
Ingredients:
400 g Garofalo Spaghetti
100 g Cypressa Sundried Tomatoes, drained and chopped
400 g Garofalo Chopped Tomatoes (1 can)
100 g Cypressa Pitted Black Olives, drained and halved
2 garlic cloves, halved
3 tbsp Extra Virgin Olive Oil
Salt, to taste
Instructions:
Bring a large pot of salted water to a boil
In a large frying pan or skillet, heat the extra virgin olive oil over medium heat. Add garlic and cook until it starts turning golden. Remove the garlic halves from the pan.
Add the chopped sundried tomatoes and halved olives to the pan. Sauté for 2 minutes.
Stir in the chopped tomatoes, season with salt, and let the sauce simmer for 5 minutes.
Add the Spaghetti to the boiling water and cook according to the package instructions until al dente. Just before draining, scoop out a mugful of pasta cooking water and set aside. Then drain pasta in a colander.
Add the drained spaghetti to the pan with the sauce. Add the pasta cooking water reserved from previous step and toss to combine with the sauce. Cook for 1–2 minutes, allowing the pasta to absorb the flavours.
Divide the spaghetti into 4 portions. Drizzle with a little extra virgin olive oil for extra richness if desired.
