Fonio
is a gluten-free, nutrient-dense, low GI ancient grain that can be cooked in
just 3 minutes. It is a delicious alternative to rice, quinoa, couscous or polenta. Try fonio in stir-fries, stews, soups, vegan burgers, stuffed peppers, casseroles, salads, tabbouleh, buddah bowls or as a side dish. It can be used to replace any grain in any dish and also makes a delicious, creamy porridge. Fonio provides life-changing income to women farmers in the African Sahel and restores degraded soils. Fonio has been grown in West Africa for 5,000 years and is thought to be one of Africa's oldest cereals. It is mostly cultivated in West Africa in the arid Sahel region. The smallest in the millet family, fonio grains are just 1mm big, similar to a grain of sand. Fonio is also known as 'Digitaria Exilis', 'acha' or 'hungry rice' (although this is often misunderstood in English, it is not because people are hungry that it has this name, it is because it is so delicious, it makes you hungry!) Due to its small size, it is relatively difficult to process which is why it has been unavailable outside of Africa, until now! |

Preparation and Usage
For couscous-like texture:
MICROWAVE: Place 50g of fonio and 120ml of cold water into a bowl. Cover and cook for 3 minutes at 800W or until tender. Stir and leave for 3 mins. Fluff with a fork and serve.
HOB: Place 50g fonio and 120ml water into a pan. Bring to a boil, reduce heat and simmer for 10 minutes, stirring occasionally. Fluff and serve.
Fonio porridge:
MICROWAVE: Place 50g of fonio and 240ml milk in a bowl. Cover and microwave for 3.5 minutes at 800W. Stir and leave for 2 mins. HOB: Place 50g fonio and 320ml milk into a pan. Bring to a boil, reduce heat and simmer for 7-10 minutes, stirring often. Add more milk if needed

Very healthy superior grains would definitely recommend
Take care not to overcook
The first time I cooked this (on hob) I followed the guidance - simmer for 10mins. I made something that reminded me of wallpaper glue. The second time I boiled for two minutes, then rinsed it in cold water, and it's so much nicer! It's definitely something you need to experiment with. If it does create sustainable income for African households then that sounds like a good thing too.

I bought this as an experiment, but have just bought it again. I make it with nutmylk, and it is lovely. It does need stirring until it is done. Great addition to the pantry.
