History
The Great Wave Sauvignon Blanc features Katsushika Hokusai's The Great Wave C.1830. The flat-patterned wave depicted in this Japanese woodblock arches up to its majestic height, and dwarfs the three vulnerable and barely noticeable narrow boats caught in its path. Sacred Mount Fuji, glimpsed at the centre in the far distance, stands serene and eternal, unaffected by events surrounding it.
Regional Information
The proximity to the Pacific Ocean provides cool nights as well as morning mists and sea breezes during the afternoons. This is a cool and dry region, where rainfall occurs mostly during the winter period. These conditions help to achieve slow ripening grapes, resulting in a wine with crisp natural acidity, complex flavours and an elegant minerality.

Vinification Details
Viognier grapes are hand harvested early in the morning when temperatures are cooler, which helps to retain aromas and flavours. The grapes are gently pressed at a controlled temperature of 15˚C with selected yeasts, to preserve delicate varietal characteristics, typical of Viognier grapes from the cooler coastal zones in Chile.
