Traditional American Pumpkin Pie
1 tin (425g) AAFC Pumpkin 3 Eggs, slightly beaten 200g (7oz) Caster Sugar or Light Brown Sugar 1/2 teaspoon Salt 1 teaspoon ground Cinnamon 1/4 teaspoon each: ground Cloves, Nutmeg & ground Ginger 250ml (8oz) Evaporated Milk Ready made Pastry case 23cm (9")
Preheat oven to 220ºc/425ºF/Gas Mark 7 Combine eggs, sugar, salt and spices and beat well. Blend in AAFC Pumpkin, add evaporated milk and stir well. Turn into pastry case. Bake in hot 220ºc/425ºFGas Mark 7 oven for 10 minutes. Reduce heat to 180ºc/350ºF/Gas Mark 4 and bake for 40-45 minutes. Pie is done when knife, inserted in centre, comes out clean. Serve warm with a dollop of whipped cream.
