Champagne AYALA is one of the oldest Champagne Houses and has always been recognised for the quality of its wines. AYALA are known for pioneering a dryer style of pure, elegant, chardonnay led Champagnes, a style that made them so popular in the early 1900s that they were awarded a Royal Warrant by Kind Edward VII in 1908. The House has been part of the Bollinger Family since 2005 and is located in the same grand cru village in Champagne. AYALA have one of the leading female Chefs de Caves in the region, Caroline Latrive, who for over a decade has created beautiful wines that are enjoyed in some of the world’s best restaurants.

History

The house of Ayala was established in 1860 when Edmond de Ayala travelled to Champagne to learn winemaking methods and fell in love with the niece of his host Count of Mareuil. They received the Castle of Aÿ and the estate as dowry and started producing delicate Champagnes. These were very well received by aficionados, especially in the UK where Edmund's brother was well acquainted with the Royal Court. In 1882, Ayala is one of the 18 founder members of the "syndicate des Grandes Marques".

The house works dominantly with Chardonnay based wines, all from prime locations among which are Grand and Premier Cru vineyards. Throughout the Ayala range, this is a low dosage philosophy(dosage is the amount of sugar in the champagne).
