Product Information

This special variety of sweet potatoes has a purple hue on the outside, with white flesh on the inside. With a distinct nutty sweet flavour, they are much drier, with a flesh that more resembles a traditional potato than a typical orange sweet potato when cooked.

Preparation and Usage

You can use white flesh sweet potatoes much like you would a traditional potato with no need to peel the skin. Their high starch content makes them ideal for roasting, either whole, cubed, wedged or chipped. Cooked on high heat, they crisp on the outside and remain soft and tender on the inside. You can also puree them for use in soups, stews or as a naturally sweet veggie addition to sweet bakes.

Cooking guidelines


Roast:
1. Preheat oven to 200˚C / Fan 180˚C / Gas 6
2. Cut sweet potatoes into evenly sized wedges or chips.
3. Place sweet potatoes on a roasting tray lined with foil and rub with a dash of olive oil.
4. Place tray on the middle shelf of the oven.
5. Turn halfway through cooking (10 - 15 minutes).
6. Roast until tender and beginning to brown (about 25 - 35 minutes).
7. Check if the food is piping hot.
8. Serve with favourite seasoning.

Cook on the hob:
1. Peel and cut sweet potatoes into evenly sized chunks.
2. Boil water.
3. Add sweet potatoes carefully.
4. Return to the boil on high heat until tender or soft (about 7-10 minutes).
5. Carefully drain.
6. Served with favourite seasoning.
7. To mash, put back on a warm hob for 1 minute to dry. Add milk and butter if preferred and seasoning. Mash until smooth and creamy.
