Vinification details
Each grape entering our tank room is treated gently. A de-stemming machine separates every grape from its rachis (stem) to ensure that every nuance in the grape is preserved—just as it was fresh from the vine. This is crucial in preserving the tannins that reside between the skin and pulp of the grape.
