Native to the Mediterranean, Dill has been used in European food for centuries. It adds an aromatic, aniseedy warmth to fish dishes and tastes phenomenal in a beetroot and halloumi salad.

Best in Scandinavian gravalax but also great in a lemon butter for steak and lamb chops. For the perfect pickles, dill is a must have herb.

Wrap 2 bagels in foil & heat at 180ºC/Gas mark 4 for 15 minutes. Mix together 185g cream cheese, 2 tsp bart lemon juice, 3 tsp bart freeze dried dill tops & a little bart cayenne pepper. Halve bagels spread half cheese on bases & top with with 60g smoked salmon. Cover with remaining cheese & sandwich bagels together.
