Product Information

Nestled in the green fields surrounding the city of Bath, our
cheesemakers still use small batch sizes and individual buckets to
perfectly judge every step of this recipe. Made with pasteurised
cow's milk from our own single herd dairy, wrapped in compostable natureflex and sealed with a red wax stamp. This handmade cheese is soft and yielding with a white bloomy rind, and when cut, reveals an ivory coloured interior. The flavour is mushroomy and creamy with a hint of lemons.

This recipe dates back to the time of Admiral Lord Nelson, when in
1801 it was recorded that Nelson’s sweetheart was ‘gratified’ by the
flavour of this cheese. In 1993, the Padfield family rediscovered the
recipe, and have been making it ever since.

Store it in its wrapper in a cellar or a fridge at < 8°C. If you prefer your cheese fresh and slightly firm, then eat 4 weeks before the UBD. If you prefer your cheese ripe, gooey and earthy, then eat it closer to the UBD.

At Bath Soft Cheese, the farm and the family story are inseparable.
Today, the farm is run by Hugh Padfield, the fourth generation to
work the land at Park Farm. Cheesemaking has always been part of
the Padfield story, turning milk into something nourishing and full of
flavour. What began as a practical necessity has, over the
generations, become a family tradition - and today, Bath Soft
Cheese continues that heritage with pride.

It started on a small farm just outside of Bath, teaching cheddar
making, tending a herd, growing a family. Today, we both resurrect
historic British cheeses and curate them for future generations, built
on the mastery and excellence of the cheesemakers, at Bath Soft
Cheese.
