Harvested and then roasted over an open fire to develop the deep, nutty flavours Freekeh is an ancient grain made from young durum wheat. Once roasted and the shells have been removed Freekeh can be cooked like rice or barley and can be added to stews, salads or pilafs and even works well as a stuffing.

Use as the base of a pilaf with coriander, preserved lemons and pine nuts, serve with a sweet potato tagine or have for breakfast as porridge, replacing oats.

Boil - From Ambient. Boil 1 litre of water with a teaspoon of salt. Add 200g of freekeh and bring to a gentle simmer for 15 minutes, drain and allow to steam dry.
