Salad with apple, white sultanas, walnuts and Bettine goat's cheese pearls
This fresh salad with apple, lettuce, goat's cheese pearls, sultanas and walnuts is delicious for lunch, but can also be eaten as an evening meal with, for example, freshly sliced baguette on the side.
Ingredients (for 4 people)
100 g Bettine goat's cheese pearls
150 g bag of salad
1 red apple
1 small red onion
1 handful of plain sultanas
1 handful or walnuts
For the dressing:
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp. mustard
1 tsp. honey
Preparation
1. Start by making the dressing. Whisk together the cider vinegar, mustard, honey and a little salt and pepper.
2. Then pour in the olive oil while stirring.
3. Finely chop the red onion. Cut the apple into slices or cubes. Roughly chop or break the walnuts.
4. Mix the dressing into the salad. Divide the red onion, sultanas, walnuts and apple pieces on top.
5. Top the salad with the Bettine goat's cheese pearls.

In 1982, farmer and cheese maker Johan began using the milk from his two goats to make goat's cheese. He named it 'Bettine', which means female goat in old Dutch. Using traditional methods and the freshest goat's milk, the goat's cheese he produced was so mild and creamy, it was soon a best seller at the local markets and food fairs. From that moment, the Bettinehoeve business was formed on an old Dutch farm which is still used as the factory today.
