All you need is:
90ml vegetable oil (6 tbsp) or 100g melted butter
180ml water or 180ml milk
3 medium eggs
1 tub of Betty Crocker ™ Zesty Lemon Icing
Prep time 10 mins
Baking time 23-28 mins
Two 20cm cake tins or Two 12 cupcake muffin tins (and 24 cupcake cases)
3 simple steps!
Preheat oven to 180°C (160°C for fan assisted ovens or refer to manufacturer's instructions)/Gas Mark 4. For cupcakes use fan assisted oven 160°C.
Grease tins and preferably line with baking paper. For cupcakes line two 12 cup muffin tins with cupcake cases.
1. Beat cake mix, oil (or butter), water (or milk) and eggs in large bowl on low speed for 30 seconds; increase speed to medium for further 2 minutes (or beat for 3 minutes with large spoon or wire whisk).
2. Pour into tins. For cupcakes pour mixture evenly into the cupcake cases.
3. Bake for 23-28 minutes or until skewer inserted in centre comes out clean. For cupcakes bake the 2 muffin tins at the same time for 18-22 minutes. Cool for 10 minutes in tins then remove from tins.
Leave to cool completely, fill and ice with Betty Crocker ™Zesty Lemon Icing.

excellent!!
I add some peeled diced pears from the garden and a sprinkle of poppy seeds on top and these were amazing! Made 18 delicious and bouncy cupcakes that were delightful and lemony
Ok for a Box Cake
I usually make my own cakes, but due to time and health issues, I thought I'd make this for a trial run. To me, this was bland and not very lemony at all, even though I added some lemon glace icing drizzled on the top to the cake. I might try it again, but not too sure at the moment.
Divinely Delicious Cake
So light and fluffy. Very delicious. I used butter and milk... made a cake and few cupcakes. Nothing else added. No need of icing either.

I added clementine juice, peels and a clementine glaze on top and it made a gorgeous citrus cake - you could taste both the lemon and clementine elements, people were very surprised it was a box cake!
FANTASTIC
I have to say this is the best of betty crocker cakes.... Soft sponge, and lovely lemon mixed in .... I use small amount of frosting in the middle of sponge, then add a little of M&S Lemon Curd then frost the top of sponge..... Absolutely delicious .....
