In 19th century Languedoc, most of the work done in the vineyards was undertaken by women. Nevertheless, female workers were often underpaid and mistreated. Local legend speaks of a woman who stood up and challenged this exploitation; Sophie Valrose. Inspired by her story, Bijou is a tribute to her memory.

Sourced from the sin-kissed vineyards of Côteaux de Beziers, just 10km from the Mediterranean coast. The proximity to the sea brings cooling breezes and strong local winds that naturally protect the vines, while nearby oyster farms enrich the soils with subtle marine minerals, enhancing minerality and lift. The result is fresh, lifted wines with vibrant aromas that reflect their coastal terroir.

The Chardonnay grapes are hand-selected from the best sustainably farmed vineyards in Coteaux de Béziers, where the local offshore winds balance the warm Mediterranean climate and allow the fruit to develop complexity whilst preserving their acidity. We pick at night and on three dates. Destemming, gentle direct pressing with minimal skin contact followed by cool fermentations in stainless steel tanks
