Blue Dragon Medium Egg Noodles are dried medium wheat egg noodles made with free-range egg, perfect for creating authentic Asian-inspired stir fries and noodle dishes at home.
Chicken Chow Mein (Serves 2)
Ingredients:
- 2 nests Blue Dragon Medium Egg Noodles
- 1 tbsp vegetable oil
- 400g chicken breast, thinly sliced
- 2-3 spring onions, sliced
- A handful of mushrooms, sliced
- A handful of beansprouts
- 1 sachet Blue Dragon Chow Mein Stir Fry Sauce
Method:
1. Prepare the noodles
Bring a pan of water to the boil and remove from the heat.
Add the noodle nests and soak for 6-7 minutes, stirring occasionally to separate the noodles.
Drain well and set aside.
2. Cook the chicken
Heat the vegetable oil in a large frying pan or wok over a high heat.
Add the sliced chicken and stir-fry until cooked through and lightly browned.
3. Add the vegetables
Add the mushrooms and spring onions to the pan.
Stir-fry for 2-3 minutes until softened.
Add the beansprouts and cook for a further 1 minute.
4. Finish the chow mein
Add the cooked noodles to the pan.
Pour over the Blue Dragon Chow Mein Stir Fry Sauce.
Toss everything together and stir-fry for 1-2 minutes, until the noodles are heated through and evenly coated in the sauce.
Serve
Divide between two bowls and serve immediately.
Tip: Add extra vegetables such as peppers, carrots, or mangetout for more colour and crunch.
Other serving suggestions:
- Toss into vegetable stir fries
- Serve in noodle soups and broths
- Pair with tofu and Asian vegetables
- Use in chow mein and noodle bowl recipes
- Finish with soy sauce, sesame oil or chilli sauce
