250g Bob's Red Mill® Homestyle Buttermilk Pancake & Waffle Mix
120ml Water (for thinner pancakes, increase by 1 Tbsp)
Whisk together mix and water until mostly smooth. Do not overmix. Some lumps should remain.


Preheat skillet to medium heat, about 165ºC. Lightly oil hot griddle. Pour scant 1/4-cup portions of batter and cook until bubbles begin to form on the top, about 2 minutes. Flip and cook another 1-2 minutes, until done. Serve hot.
