Bolla Soave Classico Rétro not only draws on the style of the historical nineteen-sixties Bolla label, but it is also created using the procedures of a winemaking tradition worth saving. It comes from historical hillside vineyards, on mineral-rich volcanic soils. It is obtained from 100% Garganega grapes derived from natural selections generating the so-called "old vines", which produce straggly and light clusters with characteristic golden berries when ripe.

Regional information
South facing at an altitude of about 350-450 metres above sea level. Soils of volcanic origin and rich in minerals, on steep slopes furrowed by ancient dry stone terracing.
Tasting notes
These heirloom vines give strong berries with a hard skin, rich in aromatics. These encourage the wine to express floral and balsamic notes. On the palate it’s round with a rich texture, notes of candied fruit and yellow plum. Intense and persistent.

Vinification details
Grapes are picked and immediately undergo soft crushing with short cold maceration. Once alcoholic fermentation is finished, the wine is left on the lees until bottling, which is scheduled for the end of the winter.
