Cooking Instructions - General. Ensure broth is piping hot. Leave for 1 minute before sipping.; Hob - From Chilled. Pour into a pan. Bring to the boil until piping hot.; Microwave - From Chilled. Pour into a microwaveable bowl or mug. 5 mins at 900W, stir halfway through.

Borough Broth Quick and Easy Chicken Noodle Soup
Serves 2

Ingredients
* indicates optional ingredients
1. 2 x large free range chicken thighs
2. 2 pouches of Borough Broth Co. Organic Chicken Broth
3. 1 large Bok Choy cut in half
4. 2 x chopped carrots diced into 1cm chunks
5. *1 x hot red chilli sliced into 2mm strips with seeds removed
6. 6 x spring onions cut into 2mm strips
7. 2 x limes cut into quarters
8. 200g rice noodles
9. *1 x small bunch fresh coriander
10. *1 x small bunch fresh mint
11. *100g x beansprouts
12. *A squeeze of Sriracha

Method:
1. Dust the skin of the chicken thigh with a pinch of salt. Place in an ovenproof dish and cook in the oven for 20 minutes.
2. Pour the pouches of broth and heat on the hob. Bring to the boil for 30 seconds then reduce to a simmer.
1. Add the chopped carrots, half of the chillies, half of the spring onions and the juice of one lime to the broth.
2. Cook noodles according to their cooking instructions. Drain when ready to serve.
3. Remove the cooked chicken from the oven. It should be brown on top (crisp skin) and cooked through without being too dry. Set aside to rest for 5-10 minutes.
4. Add the Bok Choy to the broth with just a few minutes to spare so it softens slightly before serving.
5. Slice the chicken into bite-size pieces.
6. Prepare a plate of aromatics - beansprouts, mint leaves, coriander leaves, the other lime (chopped into quarters), and the rest of the chilli and spring onion.
7. Place the drained noodles into the two bowls. Put the chicken pieces on top.
8. Pour the hot broth over the noodles and chicken.
9. Add a sprig of coriander to garnish.
10. Serve with the plate of aromatics to add as you wish.
11. Add a drizzle of Sriracha for some additional heat (up to you how much!)
