Ortiz pack these prime tuna fillets in their escabeche sauce or dressing: Spanish olive oil combined with light white wine vinegar. Tuna packed in escabeche sauce makes lighter versions of classic tuna tapas. And you can use the escabeche sauce to make a dressing for tuna and white bean salad.
