Brindisa Tomato Gazpacho

Gazpacho is probably the most familiar and iconic Andalucian recipe. Using ripe, flavoursome tomatoes along with cucumber, onion, peppers, olive oil and sherry vinegar, the soup is fresh and vibrant with a depth of flavour and a refreshing, balanced acidity which makes it perfect for a hot summer's day.

Brindisa gazpacho has to be eaten chilled. Different garnish ingredients can be added: serrano or ibérico ham taquitos, or diced boiled egg, finely cubed peppers or cucumber pieces, chopped mint or parsley. Brindisa gazpacho also works well in a Bloody Mary recipe or as a healthy pick-me-up drink on its own. It can be laced lightly with a tot of iced cold sherry or a few drops of extra virgin olive oil. Shake gently before serving.
