History
Domaines Ott* was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world's most prestigious wines, but particularly rosé wines, made at distinctively different estates. Regarded as the “gold standard of rosé” by The Wall Street Journal, in 2016 Domaines Ott* released a new cuvée, By. Ott.

The Cotes de Provence is regarded as the finest ideal region for producing delicate Rose wines and Domaines Ott have been leading pioneers for over 100 years.
Tasting notes
The wine displays a bright, pretty peachy-pink hue.The luscious nose blends aromas of white peach and exotic fruit with hints of vanilla. The whole is complemented by a lemony and slightly spicy touch.The soft, broad palate is accompanied by a pleasant freshness that adds length and leads to a citrus and yellow fruit finish.

Vinification details
Made in Château de Selle's completely new cellar, part of the winery is exclusively dedicated to making By. Ott. The grapes are hand picked, followed by strict and selective sorting on tables and an extremely delicate pressing process of whole bunches with a super short maceration to produce the beautiful light colour. Slow fermentation takes place in thermo-regulated vats.
