Mexicans love their beans! There are over 300 different varieties. In the Southern State of Oaxaca (pronounced Wa'ha'ka) their favourite is the black bean which we use in this recipe. We also use chipotle chillies which give a smoky flavour as well as a little heat.

You'll Need
1Pack Capsicana Refried Beans, 1 x 250g pouch of ready cooked long grain rice, 4 Tbsp of Capsicana Salsa, 1 Small Can of Sweetcorn, 150g of grated Cheese, 4 Tortillas
1. Heat the Capsicana refried beans and the ready cooked rice, following the heating instructions.
2. In a bowl, combine the refried beans and the rice, then add the salsa, cheese and sweetcorn and mix thoroughly.
3. One at a time lay a warm tortilla flat and place some of the mixture in the centre of the tortilla. Fold in the sides, covering the filling, then roll it up. Start from the bottom, roll it tightly towards the top, keeping the sides tucked in as you roll.
Make it extra special with guacamole and soured cream.
