We use the classic Pinto bean in this authentic refried beans recipe from northern Mexico. Did you know they're called refried beans by mistranslation? The actual translation of 'frijoles refritos' (pronounced free'ol'es re'free'tos) should be well fried beans! We think they're delicious whatever they're called!

Make the Ultimate Quesadilla!
You'll Need:
1 Pack Capsicana Refried Pinto Beans, 1 Red Onion, 1 Tbsp Vegetable Oil, 1 Handful of Coriander, chopped, 150g of grated Cheese, 4 Tortillas
1. Heat 1 tbsp oil in a large pan over a medium-high heat.
2. Add the onion and fry until soft, remove from the heat.
3. Take 2 tortillas and lay flat, spread evenly with the Capsicana refried beans and then layer with the fried onions, grated cheese and chopped coriander.
4. Place a second tortilla on top of each to cover the filling and cook in a frying pan over a low heat for a few minutes on each side, until the cheese has melted. Cut and serve!
