Cooperativa Nuestra Señora de La Paz is located near Toledo, Spain. It has operated as a cooperative since 1965 and has 700 members, who collectively own 6,000 hectares of vineyards. Fermentation takes place in stainless steel tanks at controlled temperatures with frequent pumping over of the must through the solids. Following racking and pressing the varietal is stored in small concrete vats. The wine is partially aged in French and American oak casks.
