History
Cooperativa Nuestra Señora de La Paz is located near Toledo, Spain. It has operated as a cooperative since 1965 and has 700 members, who collectively own 6,000 hectares of vineyards. The winery uses cutting-edge technology to produce wines, with annual production reaching up to 25 million litres. Facilities include stainless steel tanks, temperature-controlled fermentation equipment, pneumatic presses, and an ageing capacity of 3,000-litre oak barrels.

Vinification details
Fermentation takes place in stainless steel tanks at controlled temperatures with frequent pumping over of the must through the solids. Following racking and pressing the varietal is stored in small concrete vats. The wine is partially aged in French and American oak casks.
