History

An estate of 50 hectares located in the Nantes area. The chateau is in Vendée, the estate overlooks the Boulogne Valley. This vineyard is spread between two districts: Melon and Folle Blanche. The age of the vineyard is around 35 years old. General Charrette spent many years in the area, staying in the windmill on the banks of the Boulogne River below the chateau, trying to escape the Republican troops on his heels.

Vinification details

Harvested when ripen, the grapes are protected from oxidation (the vineyard is centred around the vatting rooms). Moderated pressing. Severe settling and cold stalling over the fine must deposit from the juices (to extract the precursory aromas). Cool fermentation (between 15 and 17°C). Ageing over lees (no racking
at the end of alcohol fermentation). Lees are regularly suspended (traditional Burgundy practice popularly called ¿stirring the lees¿).
