Preparation and Usage
Usage for firm set
1. Use one tsp of Agar Flakes per 250ml liquid*
2. Stir gently and soak for 30 mins.
3. Heat without stirring until boiling.
4. Simmer, stirring occasionally until flakes fully dissolve (5-10 mins)
5. Pour into moulds and cool to set (strain if there are any Agar Flakes remaining)
*Acidic foods may affect the gelling strength. For best results, test recipe by taking a spoonful of the heated mixture and allowing it to rapidly set on a cool surface. If the mixture does not set in a few minutes, add more flakes and simmer for a few more minutes.

2 cups (480ml) of water, 2 tsp Clearspring Agar Flakes, a pinch of Clearspring Traditional Sea Salt, 1/3 cup (80ml) of concentrated apple juice, 150g of mixed berries (strawberries, blackberries and raspberries)
Method
Sprinkle the flakes and salt over the water, and bring to the boil without stirring.
Simmer, stirring until all the agar is dissolved.
Turn off heat and add the fruits and the fruit juice.
Stir and scoop into individual serving dishes.
Refrigerate until set then serve.

Super expensive

Waitrose agar is better
This needs twice more agar than the instructions mentioned in order to get a firm jelly. The Waitrose agar was much easier to use and dissolve.

Over packaged
Left a hard mass at bottom of bowl. The packaging is much too big for the small plastic bag with the Agar inside. I suspect if customers saw the small amount of agar inside they might see this as expensive and poor value product.

I'm just glad that our vegan panna cotta dessert worked out well! It's here if you want to try. https://www.clearspring.co.uk/blogs/recipes/matcha-panna-cotta Great tasting dessert and we used this as the plant-based gelatin. just make sure to break the flakes into smaller bits to ensure they dissolve.
