Coodrniu Ars Collecta Blanc de Blancs is an organic Reserve Cava, made from a blend of Chardonnay, Xarel·lo and Parellada, and aged for a minimum of 15 months. The result is a creamy mousse, with persisent bubbles and aromas of stone fruits (peaches, nectarines) with delicate notes of toast, brioche and notes.

The selection of grapes used to make Ars Collecta Blanc de Blancs come primarily from two areas: The Continental area and the Mediterranean climatic zone of the DO Cava (north-east Spain). After aging for 15 months at a constant temperature in the thick walls of our cellars, thisCava Reserve has a long life ahead of it.Based near Barcelona in Spain, Codorníu have now completed over 460 harvests and have the largest number of privately owned vineyards in Europe. Proudly Catalonian, this vineyard ownership and historical experience delivers wines of top quality, from the sourcing and management of grapes in their own vineyards and pressing centres, to the crisp and refreshing sparkling wine in your glass.
Tasting notes
Clean yellow colour with golden highlights and a persistent bubble bead. On the nose, delicate notes of toast and toast fruits (peaches, nectarines), with hints of brioche and nuts from the cava´s ageing. Complex, balanced and creamy on the palate with richness of aromas that improve with time in the glass.

The Chardonnay variety gives this Cava an extraordinarily unctuous smoothness that combined with very high acidity, offers a great range of food pairing opportunities: seafood (prawns, langoustines, scallops, goose barnacles), raw fish (sashimi, sushi, carpaccio or tartare), cod, monkfish, all kinds of rice dishes, lightly seasoned or smoked meats.

Vinification details
This sparkling wine is made through the traditional method, in the same way as Champagne. Ars Collecta is aged for a minimum of 15 months, where a second fermentation takes places inside the bottle, naturally producing the cava´s bubbles. This process gives the wine depth of flavour, elegance and long-lasting, fine bubbles.
