Recipes
Crumbed chicken with Katsu sauce and rice
You will need...
1 jar katsu curry paste
4 breaded chicken breasts
1 tbsp vegetable oil
1 medium onion, chopped
160ml coconut cream
1/2 pack fresh coriander (optional garnish)
Jasmine rice to serve
Method
1. Cook the chicken as per pack cooking instructions.
2. Meanwhile, heat oil in a frying pan over medium heat, add onion and a pinch of salt, fry for 10 mins.
3. Add the katsu curry paste and fry for 2-3 mins.
4. Add coconut cream and bring to the boil.
5. Reduce heat and simmer sauce for 15 mins.
6. Pour the sauce over the chicken and serve with rice.
7. Garnish with fresh chopped coriander.
