Mum's Handbook
Chocolate Cupcakes
Serves 12

Step One: Sift the flour and baking powder into a bowl, before adding the remaining ingredients for the cupcakes, then mix together. The mixture should drop off a wooden spoon easily when tapped on the side of a bowl, if it doesn't, just add a drop more milk.
Step Two: Divide the mixture between 12 muffin cases and place into a preheated oven at 190°C/375°F/ Gas Mark 5 for 15-20 minutes, until risen and golden.
Step Three: For the butter icing, cream the softened butter and icing sugar until combined, before adding the crushed Cookie Crisp.
Step Four: Once the cup cakes are cool, ice each of them with the butter icing.

200g light muscavado sugar
4 large eggs lightly beaten
85g melted dark chocolate
2 tbsp milk
30g crushed Cookie Crisp

400g icing sugar
225g unsalted butter
30g crushed Cookie Crisp
