The varieties Chardonnay and Assyrtiko, from which Ploes is produced, are cultivated in the vineyards of Adriani, on a hillside at an altitude of 200–300 meters, with a northern exposure. The soil is alkaline and clayey, while planting density reaches 4,500 vines/ha. The climate is Mediterranean, with temperatures ranging from -5°C in winter to 36°C in summer. Harvest began on August 6 and was completed on September 5, with yields of 10 tn/ha.

Crafted with care, this wine is made using gentle de-stemming and crushing, followed by up to 12 hours of skin contact to capture its vibrant aromas. Fermented in stainless steel tanks under controlled temperatures and matured on its fine lees, it develops depth and character. After careful stabilization and filtering, it is bottled to preserve its freshness and elegance, ready to be enjoyed in every glass.
