Try Crazy Jack's Tasty Last Minute Couscous
Ingredients: (Serves 4)
1 vegetable stock cube
400ml of hot water
200g Crazy Jack Couscous
1 knob of butter
1 onion
1 tomato
1 carrot
1 red pepper
1 cucumber chunk
1 handful of Crazy Jack Sultanas
Juice from 1/2 a lemon
2 tbsp olive oil
1 garlic clove - crushed
A pinch of salt
Mint/Basil/Coriander for garnish
1. Make 400ml of vegetable stock and pour over the Crazy Jack Couscous in a large bowl. Add a knob of butter, cover and leave for 5-7 minutes.
2. Chop and dice the onion, tomato, carrot, cucumber and red pepper.
Mix together in a bowl with a handful of sultanas.
3. Blend the lemon juice with the olive oil, crushed garlic and salt.
Using a fork, stir into the couscous. Stir in the vegetables.
4. Chop up a good handful of fresh herbs and mix in. Serve on its own or with grilled meat and vegetables.

May contain the occasional stone.
